Guys, I struggle to find the sweet spot when killing fish. I hate wasting good flesh trying to kill the fish.

What's the best technique regarding finding the kill spot with a knife?

I stab the fish just behind the highest point of the gill slit and push the tip of the knife towards the eye on the opposite side of the fish, you will know when you hit the sweet spot and there is absolutely no meat damaged.
